Crunchy Tortilla and Corn Salad with Beets, Pistachios and Garlic Dressing
A lovely, crunchy full of flavor salad made with ingredients from the fridge.

Mix beets with olive oil, chilli flakes, Italien spice herb mix, and a pinch of salt and pepper in a bowl.

Add beets to a baking tray with baking paper and bake for around 45 minutes in the middle of the oven at 175 degrees Celsius or until they are tender.

Whisk lemon juice, olive oil, and a pinch of salt together in a bowl.

Add corn, cucumber, and avocado to the bowl and toss around.

Plate the salad on a plate and add the beets on top.

Drizzle a bit of garlic dressing, then add pistachio nuts and crushed tortilla chips on top.
