Season chicken well and marinade for at least 30 mins in soy sauce, honey, rice wine vinegar.

Cook in a large pan on both sides until golden brown & sticky, be careful not to burn.

Remove and set aside.

Add spring onion and cook for 1-2 mins and then mix in garlic and ginger.

Add in rice and cook for 2-3 mins, pour in stock, season and add chicken back in.

Cover and cook until all the liquid has evaporated and serve with spring onion & coriander.
