Nando's Peri Peri Chicken One Pot Meal

    In a large bowl add chicken & marinade ingredients, season & mix well! Leave for at least 30 mins if you can.

    Heat olive oil in a pan, add chicken and cook on both sides until golden, remove and set aside.

    Add onion & cook for 3-5 mins over low heat until softened, mix through garlic for 1 min.

    Add peppers and cook for 2-3 mins, pour in rice and cook for 2-3 mins to combine all the flavours.

    Pour in stock, add peas/corn & add chicken back in.

    Cover and cook for 10-15 mins until liquid has evaporated, add more liquid if required.

    Serve with a drizzle of Nando’s sauce on top and a sprinkle of coriander 🌿
