Blend almonds, pumpkin pie spice, coconut oil, pumpkin, protein powder, and dates in a food processor for 2 minutes or until well combined.

Pour mixture in a mixing bowl and roll the dough into ~15 cookies, about 1 1/2-inches thick.

Roll each energy ball until lightly covered with crushed honey cinnamon crackers.

Store in refrigerator for at least an hour to chill. Serve cold or at room temperature.

Can be customized to your heart's desire, love double batching and storing in the fridge when I need a pick me up treat.
