Creamy Garlic Cauliflower Mash

Directions

    Blend all chimichurri ingredients in a blender or food processor. Pour in a bowl + place in the fridge.

    Cook riced cauliflower in microwave or over the stove. In a blender or food processor add cooked cauliflower, butter, garlic, chives and splash of almond milk. Blend until a smooth puree is formed.

    Chop steak(s) into cubes. Turn on medium high heat and add olive oil and butter. Once hot, add steak cubes. For a medium cook, let sit for ~2 minutes then flip over and cook for another 2.

    In a separate pan, sauté the veggies of your choice with olive oil, salt + pepper over medium heat. Set aside.

    Build your bowl: layer cauliflower mash purée, steak, veggies. Top with the chimichurri + fresh parsley and enjoy immediately.
