    Begin by cooking your noodles as per the packet instructions. Once cooked, drain and wash in cold water.

    Dice up your red onion, cucumber and avocado.

    Chop your surimi chunks into pieces.

    In a bowl combine lighter than light mayo and thai sauce.

    Add the cooked noodles to the sauce.

    Add your red onion, surimi and cucumber to the noodles.

    Serve with avocado, spring onion and sesame seeds. Add a touch more thai sauce if you desire.
