Boil your rice according to rice instructions

Season the chicken in Oregano

Spray a pan with fry light and cook the chicken until one side is golden for roughly 5 minutes. Then flip and add the onion.

Add the chicken stock and let this reduce roughly 5-10 minutes. After, add the asparagus and courgette. Keep this on the simmer for a further 5 minutes.

Drain your rice and combine it with the lemon juice and dill before adding to the bowl to serve.

Add the chicken and vegetables from the pan to the rice. Serve with feta and olives
