Coconut Red Thai Prawn Noodles

Spray a pan with coconut fry light, heat up the pan and gently fry off the prawns in the garlic.

After a couple of minutes, add the coconut milk and red thai paste and combine. Then add the broccoli and carrot.

Pop this back on the heat for 5 minutes to simmer over a low/medium heat.

Add in the noodles and simmer until cooked. At this point add the extra cream if required.

Serve the dish with spring onion and chilli oil and chillies.
