    Place the eggs in a saucepan and cover them with water. Bring to a boil over high heat, then reduce heat to low and simmer for 10 minutes.

    Remove the eggs from the heat and transfer them to a bowl of ice water. Let them cool for a few minutes, then peel and chop them into small pieces.

    In a separate bowl, add chopped eggs, add salt, pepper, mayonnaise, spring onion and lettuce mix until well combined.
