    In a small bowl, whisk together honey and olive oil until thick and caramel like - this will take 2-3 minutes. Add a pinch of salt and 1 tsp cinnamon, whisk to combine. Set aside.

    In a blender, purée cottage cheese, sour cream, oats, eggs, 1 apple (cored), 1 tsp salt, and 1 tsp cinnamon.

    In a medium bowl, gently stir together blender batter, baking powder, and diced apples.

    Make pancakes dropping 1/4-1/2 cup (depending on your preferred size) of batter onto a hot buttered skillet or griddle set over medium heat. Cook until bubbles rise on the first side, flipping to cook the second side until beautifully golden brown (2-3 minutes). Top with butter, caramel sauce, and apples and/or pecans. Enjoy!
