Eat Your Greens Quesadilla
Thanks to @mesa_sana, my fav Mexican creator for inspiring this delicious low carb gluten free quesadilla!

Trim stems off leaves so a rough circle or oval leaf remains. Fold in half (with dark green shiny side facing in) with spine of stem facing out - trim stem nearly flat with leaf (without cutting through the stem). Run a knife halfway through the depth of the stem to help it fold without cracking. Invert leaf so dark green is on the outside and light green is folded inside. See video.

Fill with cheese and your choice of quesadilla fillings. Gently place in hot frying pan, with a little oil, over medium high heat. Fry for one minute then gently flip and fry for one additional minute. Place on cutting board and allow to rest for a minute. Blot with paper towel to absorb excess moisture - there will be some accumulated steam from the leaf. Then slice and enjoy!
