Cut bacon strips in half. Partially cook bacon in microwave, frying pan, or oven until mostly cooked but still very pliable.

Preheat oven to 400°F. Slice tops off figs then slice figs almost into quarters lengthwise, about 3/4 of the way through, leaving the base intact. Using a pinching motion, gently pinch the base of each fig while pressing down so the base flattens and the top splays open (see video) - almost a tulip shape. Place a small ball of goat cheese in the center of each fig and then wrap with a piece of bacon around the base of each fig, securing with a skewer or rosemary sprig.

Place the fig skewers on a parchment lined baking sheet and bake until the bacon crisps and the goat cheese turns a beautiful deep golden, about 15-20 minutes. Top with sea salt, pistachios, black pepper, and a drizzle of honey. Enjoy!
