Chicken Gnocchi Soup (Dairy-Free)

A dairy-free version of the classic soup, using plant-based butter and unexpected ingredients.

    Sauté together onions, carrots, and celery with seasoning and salt and pepper. Cook for 2 minutes until translucent and add in garlic. Cook for an additional minute and add in flour. Toast this for a few minutes until golden.

    Blend together 16 oz bone broth and a can of white beans with juice until smooth. This is the substitute for your cream.

    Slowly add this mixture into your pot with your flour and continuously stir to avoid lumps.

    Add in an additional 16 oz of chicken bone broth along with the seasonings listed above.

    To cook your chicken place the breast directly into the broth and cover and cook on medium low for 30 minutes. Remove them and shred them up.

    Add in your gnocchi and return the chicken to the pot. Cook this until your gnocchi float about 3 minutes or so.

    Add in a handful of fresh spinach and enjoy.
