    Finely mince and add to a pot.

    Add everything to a pot and bring to a boil.

    When the skin of the tomatoes comes off transfer with the onion to a blender and blend with 1L veg stock.

    Add the mix through a sieve back to the pot to discard the fibers.

  5. 5

    Bring the soup to a light boil and let it simmer.

  6. 6

    Blend until smooth and add to the soup. Let it simmer for 20mins.

  7. 7

    Add them to the soup and let it simmer for another 40min.


Notes

Serve with rice, omo tuo or fufu and enjoy.
