    Cook soy chunks in water until the water is gone and set aside.

    Sauté onion, garlic, carrots, chili, and ginger in coconut oil for 5 minutes.

    Add red curry paste, tomato sauce, coconut milk, and lime juice. Let it simmer.

    Add cooked soy chunks and optional lime leaves. Let it simmer while preparing rice noodles according to the packet instructions.

    Stir in cilantro and crushed cashews.

    Serve with additional lime juice and chili flakes.
