In a bowl add the honey and milk and microwave for about 15 seconds or until warm (not too hot or cold)

Add in the yeast, stir and set aside

In your mixing bowl add the flour, sugar and salt

In a pot brown 60g of butter for the dough

Pour in the brown butter into the dry ingredients, pour in the yeast mixture once risen and activated (takes 5-10 min depending)

Using your mixer with a kneading head, knead for 5 - 10 minutes until a dough ball forms and stops sticking to the sides of the bowl

Grease a large bowl and place in the dough, turn over in the bowl so it’s greased and cover with a damp towel and rise for 1-2 hours (until risen or almost doubled in size)

While dough is rising brown the butter for the filling and icing separately and place into containers in the fridge to set until softened butter consistency

Once the dough has risen punch down dough and place on a counter top and roll out into a rectangle

In a bowl add the filling ingredients and mix with a spoon, spread over the dough with a spatula

Roll up the dough into a cigar and cut with a sharp knife into 8 - 10 slices

Line a baking dish and add the cinnamon buns, cover and allow to rise for about 20-30 min until risen

Preheat oven to 180°C/356°F while rising, when risen place in cinnamon buns into the oven

While baking mix together cream cheese frosting

Bake for about 15 minutes or until golden then remove from oven

Spread the frosting on top with a spatula and enjoy!
