Picanha and Chimichurri Sandwich

This sandwich feels like summer to me and with fall quickly approaching I need to savor all the grilling and smoking sandwiches I have been making all season.

    Season all over with your favorite rub and get it in the smoker or oven at 275 till an internal of 130F is reached this should give you wall to wall medium rare.

    In a bowl, add chopped cilantro and parsley, then add 1 cup of olive oil and 1/2 cup of red wine vinegar. Add chopped fresno peppers and minced garlic. Stir and enjoy.

    Spread light mayo and old school mustard on the bottom.
