A look back to the first low calorie chicken sandwich I made in this series.

Ingredients
Bread Ciabatta
Daikon and Carrots Pickle
Chicken Thighs
Bang Bang Sauce

Mix together Bang Bang sauce ingredients and leave some on the side for the end.

Cube 3 4oz chicken thighs and add them to the sauce, mix well.

Skewer the chicken and air fry at 385F for 12 minutes, flipping at 6 minutes, until an internal temperature of 165F is reached.

Coat the chicken with the remaining sauce.

In a bowl, add sliced carrots and daikon in a 1:1 ratio of vinegar and water with 1/2 a cup of sugar, let sit at least 1 hour.
