    Grease 6 of the cups in a muffin tin.

    Place 3-4 spinach leaves, a few of your sliced peppers, and 2-3 sausage pieces in each muffin tin.

    Into a medium sized bowl, crack all of your eggs.

    Add in cottage cheese and mustard, then whisk until well combined.

    Pour about 1/4 cup of your egg mixture over each muffin tin.

    Bake @375 for 20 minutes, or until cooked through in the middle.

    Store in an airtight container in the refrigerator and enjoy!
