Peel the outside, and remove the top and bottom of the pineapple. Cut it into quarters and remove the centre core. Cube into bite-sized pieces.

Place the pineapple into a bowl.

Wash, dry and chop up cilantro. You don’t have to remove all the leaves, just bunch it up and mince it and only avoid the stems that are thicker and woodier near the base.

Sprinkle Tajin, Chomoy sauce, sugar and pepper over the pineapple and toss well. Stir in cilantro. Serve.

This salad will hold up well for 2-3 days.
