Whisk flour and salt together and out onto the counter. Make a well and plop your egg into the center. Using a fork, slowly whisk the egg incorporating more flour bit by bit.

When it turns into a shaggy dough gather it up and knead with the palm of your hand keeping the dough close to you so you can give it a lot of oomph.

When it is smooth and bounces back when you poke it, let it rest for 30 minutes. If you want more time, wrap it in plastic wrap and put it in the fridge.

Roll it using a pasta machine or roll it on your counter and use a rolling pin to make sheets or any shape you want.

Cook in boiling salted water for about 3 minutes.
