Taiwanese sweet potato congee held a special place in my childhood. It’s simple and nourishing. Best of all, it only requires 3 ingredients: rice, water, and sweet potatoes. The subtle taste from the sweet potatoes makes this perfect as a base for toppings. But it’s also delicious on its own. There’s nothing quite like it!

    Add rice into rice pot and wash rice a few times until water runs clear. Drain water.

    Prepare sweet potato and place on top of rice.

    Add 4 cups of water.

    If using Tatung electric steamer/rice cooker, pour 1 cup of water into inside pot. (If using standard rice cooker, skip this step.)

    Place rice pot into inside steamer.

    Press start and switch “on.”

    Let cook for about 45-50 minutes until switch automatically turns off. Allow it to “keep warm” for another 10-15 minutes.

    Stir and season with salt, white pepper. Add desired toppings and garnishes. Enjoy hot.

    To reheat, add a bit more water if needed so it’s easier to mix.
