Golden Fried Rice

In a large bowl, add yolks in with rice and mix well until every grain is evenly coated.

Season egg whites in a separate bowl with a pinch of salt.

On medium high heat, add oil and allow it to heat up for a minute.

Add in ginger and white part of scallions. Stir to incorporate.

Add rice mixture into hot pan and season with salt, sugar, and white pepper. Mix well and press gently.

Add green part of scallions and keep mixing.

After about 3 minutes, make a small space on the pan, add a bit of oil, and pour in egg whites and stir to cook.

Mix everything to incorporate.

Plate fried rice and garnish with more scallions.
