Summer Pasta with Courgette and Asparagus

    Prep and cut the veggies.

    Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Reserve 100ml of pasta water before draining.

    Heat a non-stick frying pan over medium-high heat. Add a drizzle of olive oil. Once hot, add the courgette and asparagus. Cook for 5-7 minutes until they are slightly browned.

    Season the courgette and asparagus with salt, black pepper, and the juice of half a lemon. Stir well to combine.

    Add the reserved pasta water and grated Parmesan to the pan. Stir until the cheese has melted and the sauce has slightly thickened.

    Add the cooked pasta to the pan, tossing everything together to coat the pasta with the sauce. Serve immediately with extra Parmesan on top.
