    Preheat the oven to 180°C.

    In a large mixing bowl, combine the sugar and lemon zest. Add the eggs and vanilla sugar, and whisk with a mixer for 4-5 minutes until light and frothy.

    Add the melted butter and mix for another 2 minutes.

    Sift the flour, baking powder, and salt together, then add to the wet mixture. Mix until no lumps remain.

    Brush the base of the cake pan with melted butter and drizzle with honey. Arrange thinly sliced plums in a circle to cover the base.

    Gently pour the batter over the plums, spreading it evenly. Bake for 44-50 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
