Lule Kebab is a traditional Azerbaijani kebab made from minced meat. The authentic recipe uses a combination of ground meat and fat, cooked on skewers. I’ve created a homemade version, enhancing the flavor by adding butter to make up for the absence of additional fat.

    In a large bowl, combine all the ingredients for the kebab. Mix with your hands until well blended.

    Cover and refrigerate the mixture for 30-45 minutes.

    Wet your hands and shape the mixture into kebabs (10-12) around wooden skewers.

    Heat vegetable oil in a frying pan and cook the kebabs over medium heat, turning frequently, for 4-5 minutes on each side.

    For the onion salad, mix all the ingredients listed and massage with your hands. Let it rest for 15 minutes.


Notes

Serve the kebabs with lavash and onion salad. Enjoy!
