Crispy Filo Quiche
Wrapped in crispy filo layers, this quiche is perfect blend of flaky and savoury goodness!

Preheat the oven to 180 C.

Whisk the eggs, milk, salt and paprika.

Add grated cheese, green onions, roasted vegetables, courgette slices and mix well.

Brush a pie dish with oil mixture.

Lay a sheet of filo pastry inside the dish, allowing the edges to hang over the edge.

Repeat with remaining sheets of filo, placing them on top of each other and brushing with oil in between each layer.

Pour the egg and vegetable mixture over the filo sheets.

Fold the edges of the filo over the filling to create a rustic crust.

Bake in the preheated oven for 35-40 minutes.
