This is my take on a high protein queso style dip!

    Blend cottage cheese till smooth.

    Add to small sauce pan.

    Mix in garlic, green onion, grated garlic, some salsa, canned green chili, salt, pepper and shredded cheese. Melt over low heat stirring.


Notes

If using grass fed cheese keep in mind it has no stabilizer or emulsifiers so they may be some separation in the dip. If you don’t mind that then carry on as described. If you want it to stay together try using a shredded cheese with the emulsifiers. You can also add cornstarch to help the fats from separating!
