Pre-heat the oven at 170 degrees Celsius fan and line a baking tray with parchment paper.

Lay out the filo pastry sheets and brush about a tbsp of olive oil.

Place the block of feta cheese in the middle and fold the filo pastry sheets like youâre wrapping a parcel. Bake for 20 minutes, turning half way through.

In a small bowl, mix together the honey and chilli flakes. Once the pastry is done, top with honey and fresh thyme.
