    Chop the red pepper, tomatoes, onion and cucumber into cubes. Place in a bowl.

    Season with olive oil, red wine vinegar, salt and the spices. Mix to combine.

    Place in a blender and blitz for 30 seconds until smooth.

    Serve with a drizzle of olive and enjoy cold.
