Boil the lentils in 4 cups of water for 10 minutes until they’re almost cooked, then set them aside.

Dice the onions into medium-sized cubes, then fry them in about 3 tablespoons of olive oil on medium heat.

Keep stirring the onions for about 5 to 6 minutes till they start to brown and when they brown keep going for two more minutes until you see a very dark brown color on the edges.

Add the lentil water to the onions and mash the onions with a spoon to release that reddish-brown color into the water, then add the lentils, the bulgur with a pinch of salt, mix it, and if it needs more water, just add half a cup.

Once it boils, reduce the heat to a simmer. Cover and let it cook for two minutes. Uncover, give it a gentle stir. Cover once again and let it cook on the lowest heat for five more minutes.
