Cube your chicken breast and add to a bowl. Coat with avocado oil before adding cornstarch, flour, and dry seasonings. Mix well until chicken is coated. Add to a baking sheet line with parchment paper and make sure chicken is spread out into an even layer. Bake at 425 for about 12 minutes or until cooked through. Once done, coat chicken with buffalo sauce.

Add all ingredients for the slaw to a bowl and mix well. Taste and adjust seasoning as needed.

Add all ingredients for the pepperoncini ranch to a blender and blend until mixed. You can also use an immersion blender. Taste and adjust consistency as needed by adding additional buttermilk.

Assemble the wrap by adding the buffalo chicken bites, slaw, pickles, pepperoncinis, and pepperoncini ranch to the large tortilla.
