    Pre-heat the oven to 190℃.

    Add the Brussel sprouts to a microwave proof bowl. Cover and cook at 1000W for 1 minute.

    On a lined baking tray, add the brussel sprouts, halloumi, torn wraps, fennel seeds, cracked black pepper and half the salt and olive oil. Mix and bake for 8-10 minutes until golden, turning once mid way.

    Add the radish, celery and herbs to a bowl along with extra black pepper. Add the baked ingredients, along with the second half of the oil. Mix well with hands and serve into a bowl or container for meal prep.
