Chinese style chicken balls with sweet and sour sauce

    Add the cornstarch to a small bowl and add 2 tablespoons of water. Mix until the cornstarch has been dissolved.

    In a small pan, combine all sauce ingredients. Heat on medium and once warm add the cornstarch slurry. Whisk continuously until thick (1 minute). Pour into a serving bowl and leave to cool.

    In a large bowl, add the flour, salt and baking powder. Mix and then add the milk ensuring the raw flour has been dissolved. Add the chicken and mix until covered well.

    Heat the oil or shortening in a large wok or pot. Once just starting to smoke (or the temperature reaches 325F/180C) spoon the chicken pieces from the batter individually into the oil, ensuring not to over crowd the pan. Cook for 2 minutes each side or until golden brown.

    Remove using a slotted spoon, place into a large mixing bowl and sprinkle with salt. Place onto a serving plate and repeat with remaining chicken.

    Serve hot with prepared sauce.
