Homemade Chilli Oil Noodles

    Cook noodles according to the instructions on the packet. Drain and set aside.

    In a small pan, heat the oil (roughly 2-3 minutes) but don’t carful not to allow it to reach smoking point.

    In a large mixing bowl, add the chilli, spring onions, coriander, lemongrass paste, ginger, garlic, crisp chilli, sesame seeds and sugar. pour the hot oil over and allow to sizzle.

    Add the cooked noodles and soy sauce, mixing well to coat evenly.

    Serve on plates with protein of choice (I love soft boiled eggs). Finish with lime, fried shallots and extra coriander.
