Make the Cinnamon Roll Filling: In a separate bowl, mix the softened butter, brown sugar, and cinnamon until smooth and well combined.

Assemble the Sandwiches: Take the brioche slices and spread an even layer of the cinnamon roll filling on one side of each slice. Top with another slice to create a sandwich.

Coat and Cook the Sandwiches: Dip each brioche sandwich into the French toast mixture, ensuring it is well coated. Heat a lightly oiled frying pan over low to medium heat. Fry the sandwiches until they are lightly golden and crisp on both sides.
