This gluten-free, dairy-free pumpkin coffee cake is bursting with fall flavors.

    Preheat oven to 350F.

    Prepare baking dish (8x8 or 9x7) with parchment paper.

    In a mixing bowl, add all dry cake ingredients. Mix well.

    Stir in the wet ingredients and mix until everything is well combined.

    In a small bowl, add all the crumble ingredients.

    Transfer cake batter to baking dish and sprinkle crumble on top.

    Bake for ~35 minutes or until a toothpick comes out clean.

    Cool, slice and enjoy. Keep in the fridge!
