Peanut-Free Snickers Bars
Layers of almond flour nougat, date caramel and roasted cashews coated in dark chocolate.

Pit dates and soak in hot water for ~10 minutes to soften. Drain the water before use.

In a food processor, combine almond flour, dates and cashini for the nougat base. Blend until the mixture starts to form together.

Prepare a baking dish with parchment paper and press the nougat base evenly to cover the bottom.

Clean the food processor and then add dates, cashini and vanilla extract for the caramel layer. Blend until smooth, scraping the edges as needed.

Spread caramel evenly over the base.

Add roasted cashews to cover the caramel and press them down lightly into the caramel.

Transfer to the freezer for 2-3 hours.

Using a microwave or double boiler, melt chocolate with coconut oil and stir until smooth.

Remove the bars from the freezer and slice into bites of desired size.

Coat each piece in chocolate and then put them in the fridge so the chocolate can set.
