Sticky Sweet Chilli Pork Belly Bites
A modern twist on a Moon Festival classic, mixing cosy, familiar flavours with a bit of fun.

Season the pork belly pieces with salt, pepper, soy sauce, rice vinegar, and honey, then set aside to marinate for 20 - 30 minutes.

Coat each piece with cornstarch then fry in batches until golden brown and crispy, about 5 - 6 minutes per batch.

Drain on paper towels.

For an extra crispy texture, you can double fry the bites for a further 2 minutes.

In a separate pan, combine sweet chilli sauce, soy sauce, brown sugar, rice vinegar, garlic, and ginger.

Cook over medium heat until the sauce thickens, about 5 minutes.

Toss the fried pork belly in the glaze until evenly coated, then transfer to serving dish.

Sprinkle with sesame seeds, and garnish with chilli and fresh coriander leaves.
