Long Life Noodles with Mauritian Beef & Onion Stir-Fry

Beef & Onion Stir Fry

Stir Fry Sauce

Directions

    Combine flour, salt and eggs in the bowl of a stand mixer. Knead for 10 mins. Cover and rest for 30 minutes. Divide in half and roll out using a noodle or pasta cutter.

    Bring a large pot of water to a boil and cook noodles for 60-90 seconds. Drain, run under cold water and set aside.

    Mix the stir-fry sauce and mix 2 tbsp with beef. Add cornstarch, mix well and set aside for 10 minutes.

    Heat oil in a wok over high heat and stir-fry onion and the white part of the spring onion, about 2 minutes.

    Add the beef and stir-fry for 5 minutes.

    Add noodles, remaining sauce, green part of the spring onion and toss well.
