Sun-dried Tomato Aioli & Halloumi Cheese Toast

    Make the Aioli: If using a mortar and pestle, start by adding the garlic cloves with a pinch of salt and smash until minced. Add the sun-dried tomatoes and mash them as well. Add Chosen Foods mayo and lemon juice, mixing until fully combined. Alternatively, you can use a food processor or hand mixer: simply blend all the ingredients together until smooth.

    Fry the Halloumi: Heat a frying pan over medium heat and add Chosen Foods avocado oil. Prepare a plate with paper towels. Once the oil is hot, carefully place the Halloumi slices in the pan. Cook until golden brown on both sides, flipping halfway through. Remove from the pan and let them rest on the paper towels to absorb any excess oil.

    Assemble the Toast: Toast the bread to your preference. Spread 1-2 tbsp of the aioli over the toast and layer with fresh arugula. Top with the fried Halloumi cheese slices, sprinkle with pomegranate seeds, and drizzle with hot honey to finish.
