Baked Brie with Cherry Tomato Confit
This appetizer quickly became one of my all time favorites. The baked brie melts into the Dan-O’s Cheesoning seasoned confit tomatoes, creating a rich, buttery spread. Paired with crispy baguette slices, it’s a seriously impressive dish that never disappoints.

Preheat the oven to 350°F.

In a baking dish, combine cherry tomatoes, garlic, Cheesoning, and olive oil. Mix well.

Place the dish in the oven and bake for 15 minutes.

Using a sharp knife, score the rind of the brie in a grid pattern.

Remove the baking dish from the oven and carefully place the unwrapped and scored brie in the center. Place the brie on parchment paper to prevent it from being affected by the liquid released by the tomatoes.

Return the baking dish to the oven and bake for an additional 15-20 minutes.

Meanwhile, toast the baguette slices to your liking, either in a hot pan or in the oven.

Once out of the oven, top the brie with fresh thyme, honey, and red pepper flakes.

Spread the garlic confit on a toast, followed by the confit cherry tomatoes, and then spread the creamy brie on top. For an extra layer of flavor, you can add more tomato confit on top of the brie.
