For onion & tomatoes masala

For marination of brinjal slices

For tarka

Directions

    Marinate for 1 hour and shallow fry in oil in a wok for 3-5 min until golden brown from both sides and set it aside

    In the same wok add oil and then add sliced onion and tomatoes along with all the spices mentioned above and sauté fry for 5 min and set it aside

    In yogurt add salt , chaat masala, green chutney and imli chutney and whisk well and set it aside

    In a dish first add yogurt mixture and then add the brinjal slices layer

  5. 5

    Then add the onion tomato mixture

  6. 6

    Then repeat the layers

    Add tarka on top as well

  8. 8

    Add crushed papdi on top as well
