Preheat your oven to 350°F.

Cream together the butter and sugar.

Add eggs one at a time, mixing until smooth.

In a separate bowl, whisk your flour, baking powder, and salt.

Whisk your milk and extract in a separate jug.

Add 1/3 of the dry mixture to the butter mixture and mix to combine.

Add 1/2 the milk mixture and mix to combine.

Repeat until both the dry and milk mixtures are all incorporated (making sure to finish on the dry mixture).

Separate 1/3 of the batter into a medium bowl and fold in the espresso.

Grease an 8x8 loaf pan with nonstick cooking spray and line with parchment paper.

Alternate scoops of each of the cake batters into the pan.

Use an offset spatula to create a marble effect.

Bake the cake in the preheated oven for 35-40 minutes or until a toothpick inserted comes out with a few moist crumbs.

Add the espresso or strong coffee into a small bowl with dark rum and mix to combine.

When your cake comes out of the oven, poke holes with a skewer and pour the coffee soak over the cake.

Let soaked cake cool completely.

In the bowl of a stand mixer add the heavy cream, powdered sugar, vanilla, and salt.

Whip until soft peaks form.

Add the mascarpone and continue to whip until well combined.

Scoop the cream on top of the soaked, cooled cake and spread into an even layer with an offset spatula.

Dust with cocoa powder.
