    Preheat oven to 325 degrees Fahrenheit.

    Cream together butter and sugars.

  3. 3

    Mix in vanilla and egg.

    Add baking soda, salt, spices, and flour.

    Set aside.

    Add small diced apples, brown sugar, cinnamon, and salt to a medium saucepan.

    Cook on medium-low heat until fragrant and the juices from the apples are released.

    Add cornstarch and cook until the juice thickens.

    Turn off heat and transfer filling to a bowl to cool.

    Scoop cookie dough onto a parchment-lined tray.

    Make an indent with the back of a tablespoon and add a tbsp of the apple filling.

    Chill/freeze cookies for 30 minutes.

    Bake for 15-18 minutes or until golden brown on the edges.

    Mix all glaze ingredients until smooth.

    Drizzle glaze overtop each cookie.
