Pumpkin Cheesecake Loaf with Brown Sugar Crumble

A delicious pumpkin cheesecake loaf with a brown sugar crumble topping

Ingredients

Directions

    Preheat your oven to 350°F.

    Cream together the butter and sugar.

    Add eggs one at a time. Mix until smooth.

    In a separate bowl, whisk your flour, baking powder, salt, and spices.

    Whisk your milk, sour cream, and pumpkin puree, and vanilla in a separate jug.

    Add 1/3 of the dry mixture to the butter mixture and mix to combine.

    Add 1/2 the milk mixture and mix to combine.

    Repeat until both the dry and milk mixtures are all incorporated (making sure to finish on the dry mixture).

    To make the filling, mix together the cream cheese, vanilla, egg yolk, and sugar until smooth.

    To make the crumble, mix together the sugars, salt, cinnamon, 1/2 the flour, and the melted butter.

    Add the rest of the flour and mix until you reach a crumbly consistency.

    Grease a standard loaf pan with nonstick cooking spray and line with parchment paper.

    Transfer 1/2 of the cake batter into the pan.

    Add the cheesecake filling.

    Cover with the rest of the pumpkin batter.

    Top with streusel.

    Bake for 35-40 minutes or until a toothpick comes out with a few moist crumbs.

    Let the cake cool and then release from the pan using an offset spatula.
