French Onion Soup & Cheesy Chips

A comforting combination of French Onion soup and cheesy chips

    Melt the butter in a large, non-stick saucepan with a lid.

    Add the sliced onions and fry on a medium heat for 10 minutes, stirring regularly.

    Add the honey and garlic, stir, and fry for a further 10 minutes until the onions are golden brown and soft.

    Make up the beef stock with boiling water and stir in the marmite until melted.

    Add the stock to the pan, season with salt and pepper, and a few Thyme leaves.

    Mix the cornflour with a splash of water and stir until smooth before stirring it into the soup.

    Place the lid on the pan and simmer for 20 minutes.

    Heat the grill to medium high.

    Divide the soup between 4 bowls.

    Place a small handful of cooked chips in the middle of the soup.

    Cover the soup in a handful of grated cheese.

    Grill until the cheese is melted, serve with a little more black pepper and Thyme.
