A quick and simple spicy miso egg fried rice recipe packed with protein and perfect for using up leftover rice.

    In a small bowl, combine all the sauce ingredients and set aside.

    Heat oil in a pan over high heat and beat 3 eggs until scrambled!

    Add in the leftover cold rice and the miso paste. Mix well so that all the rice is coated with sauce.

    Add in the chopped scallions and sesame seeds and serve with a crispy egg on top!
