Sweet and Savory Creamy Shrimp Curry with Peaches and Coconut Milk
A unique and delicious curry recipe that combines juicy ripe peaches with coconut cream and Indian spices.

In a small bowl, combine shrimp with all the spices and then cook them in a saucepan or grill them until they are almost fully cooked.

Heat oil and ghee in a pan over medium heat and saute onion, garlic, ginger and red chili until the onions are translucent. Add in the powder spices except fenugreek.

Now pour the peach purée in the pan and add 1/2 cup water. Cover and cook in medium heat until the liquid is reduced.

Add in the coconut cream and the cooked shrimp and sprinkle the fenugreek leaves powder. Stir well and cook on high heat for 2-3 minutes.

Serve over rice and ENJOY!!
Notes
Blanching peaches in hot water for couple of minutes then soaking in ice water is an easy way to peel the skin!
