Orecchiette with Sausage and Rapini

    Heat some oil in a heavy skillet.

    Brown the spicy Italian sausage.

    Cook the garlic until fragrant.

    Caramelize the Calabrian chillies.

  5. 5

    Add the chopped rapini and mix well.

    Steam for a few minutes with a splash of water or white wine.

  7. 7

    Cook the orecchiette until they float.

  8. 8

    Add the cooked orecchiette to the sausage and rapini mixture.

  9. 9

    Finish with Parmigiano Reggiano and a splash of pasta water.

    Serve with more grated cheese.
